Frequently Asked Questions
Preparation & Safety
Are your products ready to eat, or do they require cooking?

Please look at the package to determine if the product is fully cooked or fresh (uncooked).

All of our deli meat is fully cooked and ready to eat.

Fully cooked hot dogs and hams can be eaten right out of the package. However, we recommend heating them to fully enjoy their texture and flavor.

Fresh products require cooking before consumption. Please see the package for cooking instructions.

Our fresh sausage should be cooked until they reach an internal temperature of 165 degrees to ensure that any bacteria that may be present is killed. Our bacon smoked, but still requires cooking prior to eating

How do you cook your Dinner Hams?
All McKenzie hams are fully cooked, so all you need to do is heat and serve. Temperature and times vary by type and size of your ham. View our ham cooking instructions here. See product detail page for cooking instruction.
How long is the product good after the package has been opened?

Our products vary by category and you should always read the package and use by date or timeframe listed on the package. In general fresh (uncooked) products should be kept in the refrigerator, tightly wrapped, and should always be consumed or frozen prior to the expiration date.

Our deli meat sold at your local retailer will be labeled with a best by date. Product should not be consumed past the date on the label.

Our franks are fully cooked and must be stored in the refrigerator and should be consumed prior to the expiration date or within 7 days after the product seal has been broken.

Frozen products should be stored in a freezer and consumed within 3 months after freezing to ensure the best flavor. Be sure to freeze the product prior to the expiration date.

Ingredients & Nutrition
Do any of your products contain Finely Textured Lean Beef?
At McKenzie, we stand by the quality of our great-tasting products, which consumers have been enjoying for more than 100 years. Our formulas do not contain any fillers, by-products, ammonia hydroxide processed finely textured beef or MSG. McKenzie products are made in the USA by manufacturing plants that meet or exceed all USDA standards.
If your product says "All Natural", what does that mean?
"All Natural" refers to products made without chemicals, food additives or refined ingredients. It is minimally processed and contains no artificial colors, fillers or by-products. We offer a full line of deli meats that are all natural, our most popular is our Oven Roasted Turkey Breast.
What are nitrates and nitrites and do your products contain them?

With growing concerns over the use of nitrates and nitrites, we have developed several items that have no nitrates or nitrites added. Our turkey breast, chicken breast, roast beef and cheeses are naturally nitrate and nitrite free and our uncured ham contains no nitrates or nitrites except those naturally occurring in celery salt.

Nitrates and nitrites are preservative used in many cured meats. Though they have received a lot of negative press due to tests that linked them to cancer in lab rats they are a USDA/FDA approved ingredients used as curing agents. Nitrites are designed to protect consumers from one of the deadliest foodborne diseases, botulism. Many uncured items are currently sold in the United States and the product is considered safe for consumption.

Many of our products do contain nitrates and nitrites, though it is something we are beginning to focus on removing from some of our product lines. See product details for more information on specific products.

What does ABF (Anti-biotic free) mean?
Animals are traditionally given antibiotics, whether they need them or not, which can remain in the meat long after they are administered. ABF or anti-biotic free meat has never been given antibiotics. We offer antibiotic-free turkey breast & ham.
What is gluten? Do your products contain it?
Gluten is a protein in all wheat, rye, barley and oat products. These ingredients are stated clearly on the ingredient label, and none are "hidden" within our "flavorings" classification.
The only McKenzie products we produce that contain gluten are our Macaroni & Cheese loaf since macaroni contains gluten.
What is MSG? Do any our your products contain MSG?
Monosodium glutamate (MSG) is used to enhance flavor. None of our products contain MSG.
What makes your natural casing frank so delicious?
We have been producing these traditional Vermont franks for over a century using U.S. beef & pork and our farmhouse recipe. The natural casings give them a unique bite that delivers the flavor New Englanders have grown to love
